Quick and easy couscous recipe with sweet apples, walnuts, cranberries and fresh mint

Ingredients

300 g couscous
2 apples
125 g dried cranberries
1 tbsp honey or agave syrup
Fresh mint leaves
4 spring onions
60 gr walnuts
1/2 vegetable stock cube
1 tsp cumin
knob of butter or margarine

Preparation

Peel the apples and cut them into pieces. Roughly chop the walnuts and cut the spring onion into rings. Heat a little butter in the pan and fry the apples, walnuts, spring onions and cranberries in a large pan for about five minutes.

Bring water (300 ml, if stated otherwise on the package) to the boil and dissolve the stock cube in it. Turn off the heat and stir into the couscous. Let soak for 5 min. Stir the couscous into the apple mixture. Season with honey and cumin. Finely chop the mint and stir it into the couscous just before serving.

This couscous is also delicious cold for lunch.
