Easy and healthy Asian recipe with chicken, sweet mango, snow peas and pistachios

Ingredients

500 g chicken breast, diced
1 mango
Fresh coriander
4 tbsp unsalted pistachios
1 onion
200 g snow peas
5 tbsp soy sauce
Pepper and salt
1 tsp ground cumin seeds
1 tbsp olive oil

Preparation

Chop the onion and fry it in the olive oil. Add the chicken and fry until lightly browned for 5 minutes. Stir in the snow peas and cook for a further 5 minutes. Sprinkle with salt, pepper and cumin seeds. Peel the mango and cut into pieces. Stir these together with the soy sauce and the pistachios through the chicken. Finely chop the coriander, add and simmer for a further 5 minutes. Cook the rice according to the package. Serve the rice on a plate and top with the mango chicken. Nice with some prawn crackers.
