Sushi salad with salmon

Don’t feel like rolling sushi? Make this salad with sushi rice, salmon and nori and you’re done in no time!


150 gr sushi rice
1 avocado
handful of lettuce
½ cucumber
100 gr smoked salmon
3 tablespoons rice vinegar
1 tablespoon sesame seeds (white and/or black seeds)
1 tablespoon soy sauce
1 tsp sugar
1 to 2 nori sheets (or nori chips or snacks)


Prepare the sushi rice as indicated on the package or follow this recipe: put the rice and 200 ml of cold water in a pan and bring to the boil. Let it cook for 15 minutes with the lid on the pan and then turn off the heat, then let it cook for another 15 minutes with the lid on the pan.

Meanwhile, make the dressing by stirring the rice vinegar, soy sauce and sugar until the sugar has dissolved. Cut the cucumber into cubes and toss with the dressing through the rice. Divide a piece of lettuce between 2 bowls and spoon the (warm or cooled) rice mixture on top.

Tear the nori sheets into pieces and divide over the rice. Cut the avocado in half and remove the skin and pit, cut the flesh into strips and place on top of the rice. Drizzle over the salmon and sprinkle with sesame seeds
Replace the salmon with surimi, tuna, shrimp or for a vegetarian version with omlette.
