Haddock with edamame and spinach

Fast, easy and healthy! That’s this delicious fried fish with edamame and coriander pesto


4 haddock fillets
3 cloves of garlic
260 grams of edamame (soy beans, for example at the Asian grocery store)
10 grams fresh coriander + extra for garnish
100 ml olive oil
Juice of half a lemon
Pepper and salt
300 grams fresh spinach
Food processor or blender


Peel the garlic cloves and add to the food processor or blender together with the coriander, lemon juice and 50 grams of the edamame and mix briefly. Add the olive oil and continue to mix until a pesto is formed. Season with salt and pepper. Rub the fish with salt and pepper on both sides.


Heat olive oil in a pan and add the remaining edamame along with the spinach. Cook over high heat for about 3 minutes, stirring frequently. Season with salt and pepper and add a teaspoon of the pesto. Heat olive oil in another pan and fry the haddock for 2 minutes on each side.



Divide the edamame and spinach among 4 plates, place the fish on top with a spoonful of the coriander pesto. Garnish with additional coriander leaves if desired.
