Make your own Thai red curry paste with this recipe and combine it with beef strips and mango


400 gr beef strips
1 mango
200 gr snow peas
250 ml coconut milk
Bunch of fresh coriander
Rice to serve with it
red curry:
1 shallot
3 garlic
2 red pepper (+1 for garnish)
1 stick of lemongrass
Zest and juice of 1 lime
piece of ginger
pinch of cumin
1 tablespoon fish sauce
1 teaspoon sugar
Food processor or mortar


Remove the outer part of the lemongrass and finely chop the inner part. Peel the ginger and cut into pieces together with the garlic, red pepper and shallot. Put all the ingredients for the red curry in a mortar or food processor and grind to a red paste.

Heat a little oil in a pan and brown the meat on all sides. Add about 3 tablespoons of the red curry (more is also possible for a spicier taste) and stir to combine. Add the coconut milk and heat the mixture. When the mixture is bubbling, add the snow peas and let them cook for 3 minutes. Peel the mango and cut the flesh into strips. Serve the curry dish with some fresh coriander, strips of mango and some rings of red pepper. This recipe tastes great with rice.
