Preheat the oven to 180 degrees. Heat some olive oil in a pan. Saute the onion and garlic briefly. Add the diced tomatoes and season with salt and pepper. Let the sauce simmer while you continue with the courgettes.
Cut the zucchini into thin slices using the mandolin or cheese slicer. Pass them through the flour. Heat some oil in a (grill) pan and grill the slices for 3 minutes and drain on a paper towel. Grease an oven dish and spread some tomato sauce over the bottom. Place a few slices of zucchini on top. Divide a few thin slices of mozzarella and some grated parmesan cheese on top. Add a few basil leaves every now and then. Repeat until all ingredients are used up and finish with a layer of mozzarella and parmesan cheese. Place the casserole in the oven for 30 minutes. For a crispy crust, turn on the grill for the last few minutes.
