Preheat the oven to 200 degrees. Chop the onion. Cut the top of the pumpkin with a sharp knife. Cut the pumpkin in half and remove the threads and seeds. Place the hollowed out pumpkins in a baking dish and brush the top with a little olive oil. Sprinkle with salt and pepper. Put them in the oven for 30 minutes.
Meanwhile, make the filling: heat the oil in a pan. Saute the onion. Add the (veggie) minced meat and brown. Season the minced meat with cumin and sage. Gradually add the spinach and let it wilt. Add the pine nuts and toss. Fill the pumpkin with the meat mixture. Crumble some feta over it. Place in the oven for another 20 minutes. Serve 1 pumpkin half per person.
