Preparation
Cut the tomatoes into small pieces. Chop the shallot, garlic and red pepper very finely and toss through the tomatoes. Add a dash of oil, vinegar and some salt and pepper. Cover the bowl and let it marinate for at least half an hour. Boil the broccoli in a pan with water and stock cube for about 7 minutes. Drain and reserve some of the cooking liquid. Puree the broccoli with a stick blender and add a little of the cooking liquid until a smooth puree is formed. Keep it warm in a pan with a lid.








Sprinkle the meat with salt and pepper. Heat some butter or oil in a pan and let it get hot but not burn. Sear the meat on all sides and then cook for another 2 minutes (depending on how pink you want it inside). Then let the sirloin steaks rest for a few minutes in a piece of aluminum. In the meantime, add a small splash of water to the pan and bring to the boil, then stir the bits of meat from the meat and let it thicken into a gravy. Spoon some of the broccoli puree onto a plate. Place the meat half on top with a little gravy and spoon over some tomato salsa.
