250 gr minced meat
3 tablespoons breadcrumbs
pepper and salt
400 g diced tomatoes from a pack or can
125 gr cherry tomatoes
Piece on 10 mini mozzarella balls or 1 large ball
Oil or butter for frying
Heat the oven to 200 degrees. Put the minced meat in a bowl. Add the egg, breadcrumbs, pepper, salt and some finely chopped basil and knead until firm. Add some extra breadcrumbs if needed.
Heat some oil or butter in the pan and fry the meatballs until they are nicely browned on all sides (they don’t have to be completely cooked on the inside). Divide the diced tomatoes over an oven dish and sprinkle with a pinch of salt and pepper. Place the meatballs in the sauce.
Cut the tomatoes and mozzarella into small pieces and divide between the meatballs. Place the baking dish in the oven for about 25 minutes. Turn on the grill for the last few minutes for a nice brown crust. Top with some fresh basil before serving. Delicious with some bread or pasta.
