I made this recipe of fish in tomato sauce during my food tour through Abruzzo in Italy



 Cut the tomatoes with the seeds and liquid into small pieces. Put a good splash of olive oil in a large pan. Saute the garlic in it. Add the diced tomatoes and a small pinch of salt and pepper. Let it simmer for about 10 minutes until the tomatoes are soft. Then put the cleaned trout in it and after 5 minutes the pieces of cod and the prawns.

 Let it cook in the tomato mixture (about 7 minutes). Turn the trout in between so that the other side is also well cooked. Toast the bread in a grill pan or in the oven. Sprinkle the fish pan with fresh parsley and insert the bread into the side.

 This recipe comes from the Trabocchi Punta Tufano in Italy. In Abruzzo this recipe was made with mussels instead of king prawns, but these were not available at the moment.
