Delicious summery and fruity couscous salad with strawberries, raspberries and goat cheese

Ingredients

Preparation

 Prepare the couscous in the vegetable stock according to the package. Stir the couscous with a fork and add a few drops of orange blossom water or some grated orange for a nice aroma. Cut the strawberries in half or in quarters and toss through the couscous. Stir in the walnuts and carefully the raspberries at the end. Divide some lettuce between plates and spoon the lukewarm couscous on top.

 Cut the avocados in half and remove the skin and pit. Cut into slices and divide over the couscous. Put some goat cheese on top and scoop some pomegranate seeds on top. Delicious with some bread and hummus.
