 Meanwhile, cook the rice. Heat some oil in a wok and add the chicken. Cut the pointed pepper into thin strips and stir-fry when the chicken is almost cooked. Add the mushrooms and fry them until they start to shrink. Cut the pineapple into pieces and add to the pan with chicken and vegetables as well. Finally, add the sauce and mix well. Garnish the sweet and sour chicken with spring onions and serve with rice and possibly some prawn crackers.
