Preparation
Roughly chop the onion and garlic and fry them briefly in a pan with a little oil or butter. Drain the grilled peppers well and put them in a food processor along with the sautéed onion and garlic. Mix this well. Return this red puree to the pan. Add the cream and stock and season with a pinch of salt and pepper. Let it simmer for about 10 minutes. Meanwhile, cook the pasta as well. Stir the cheese and coarsely chopped basil (save a little for garnish) into the pepper sauce. Drain the pasta and toss through the sauce. Heat for another minute. Divide the pasta between plates and add a little arugula, some extra basil, pine nuts and cheese and enjoy!
