 Cook the pasta according to the package and drain. Cut the chicken and salami into cubes and chop the onion. Heat a pan without oil or butter and first fry the pieces of salami with the onion. After a few minutes, add the chicken and brown it all over. Meanwhile, cut the bell pepper into cubes and add it to the chicken. Bake the mixture for about 5 minutes.

 Add the diced tomatoes and the mascarpone and stir to a smooth sauce and let the mixture simmer for about 10 minutes until it has slightly thickened. Season with a pinch of Italian herbs, salt and pepper. Add a few fresh basil, if desired. Finally, stir in the pasta and heat through. Garnish with some fresh basil.

 Tip: the mascarpone can also be replaced with crème frache.
