Give an Italian twist to your meal salad with fresh tortelloni and green asparagus wrapped in serrano ham




 Cook the tortelloni according to the package and drain with cold water. Set aside. Take 3 asparagus tips at a time and roll them in a slice of Serrano ham, halved lengthwise. Repeat until all asparagus are rolled in the ham. Heat some olive oil in a pan and fry the rolls on all sides for about 5 minutes.

 Make the dressing by mixing the olive oil and balsamic vinegar with a small squeeze of lemon juice and a pinch of salt and pepper. Cut the cherry tomatoes into quarters and divide them with the lettuce and tortelloni among 4 plates. Place the asparagus serrano ham rolls on top. Pour over the dressing and top with some pine nuts.
