Turkey and mushrooms in a crispy filo pastry jacket, delicious for Christmas



 Heat the oven to 200 degrees. Let the filo dough thaw in the packaging or under a slightly damp tea towel. Chop the onion and garlic. Fry these in a (wok) pan. Add the turkey in cubes and fry all over. Cut the mushrooms into pieces and add to the pan and fry until they have wilted a bit. Season the mixture with salt, pepper and parsley.

 Melt the butter. Take a sheet of filo dough (cover the rest again) and grease it with a layer of butter. Place another sheet on top and repeat again. Drain the turkey mixture. Spoon a quarter of the turkey mixture on top and spread in a line over the short side. Sprinkle with a little cheese. Fold the edges slightly over the filling on both sides. Carefully roll up the filo dough with the filling. Place seam side down on a baking tray lined with baking paper. Brush the top with butter as well. Sprinkle with some almond. Bake the strudel in the oven for about 20 minutes until it is crispy and golden brown.

 Replace the turkey with diced precooked pumpkin for a vegetarian version.
 You can also use 1 pack of filo dough and use 2 sheets of filo dough for 2 strudels instead of 3.
 Filo dough is quite fragile, make sure it doesn’t dry out by covering it with a slightly damp tea towel or brushing it with butter. Fresh filo dough is also available (eg at the Turkish supermarket), this is even easier to work with.
