This vegetarian version of the popular Surinamese roti is deliciously seasoned.
Preparation
 Boil the eggs in a pan of water for 8 minutes. Peel the sweet potato and cut into cubes. Chop the onion and garlic and fry in a (wok) pan. Add the sweet potato cubes and fry for a few minutes. Then stir in the tomato puree, masala spices, curry powder, pepper, salt and a pinch of chili for a spicy twist. Cut the tomato into cubes and add to the sweet potatoes as well.
 Add the water and bring to a gentle boil. Let the mixture simmer for about 15 minutes until the sweet potato is cooked. Cook the green beans in another pan for 12 to 15 minutes. Place 2 roti sheets on a plate and add some of the sweet potato and green beans. Serve the vegetarian roti with the boiled egg.
