Mexican salmon with grilled vegetables served in a pan with wraps and tasty toppings

Preparation

 Sprinkle the top and bottom of the salmon with the taco seasoning and press well. Cut the red onion into half rings and the bell pepper into strips. Fry these in a (cast iron) pan with a little oil or butter for 2 to 3 minutes. Place the salmon in between and cook for 3 minutes on 1 side, then carefully turn over and cook the other side for a few more minutes.

 The salmon should still be a little pink on the inside. Chop the spring onion into rings and divide over the pan with salmon. Meanwhile, heat the wraps and put the sour cream in a bowl. Serve the pan with bell pepper, onion and the seasoned salmon with the wraps and mango. Use the lime to sprinkle the salmon. Also delicious with jalapeno peppers and/or avocado. Also delicious with homemade guacamole.

 Tip: I used Santa Maria’s seasoning mix for fish taco.
