 Finely chop the onion and red pepper. Fry it in a little butter in a pan. Add the risotto rice and fry for 3 minutes until it starts to become translucent. Pour in a dash of white wine and let the rice absorb it.

 Then add a ladle of warm stock and stir occasionally and wait until it is absorbed by the rice. Repeat this a few more times with the stock until the risotto is almost cooked, this takes about 20 minutes. Cut the mango into cubes and add it in the last few minutes. Pour in a splash of coconut milk and add a knob of butter to make it creamy.

 Fry the fish in a pan. Check if the risotto is good, it should be soft but still have a small bite inside. Serve the fish with the mango risotto and garnish with a sprig of mint.
