These wrap sandwiches have a winter twist because of the beetroot, kale and goat cheese

 If using a pan, turn the quesadilla halfway through using a plate. Then place the plate on top of the tortilla and turn the pan over. Then put the uncooked side back in the pan. Repeat with the remaining wraps. But in the meantime, grate the yogurt sauce by the garlic clove, mix it with the yogurt, honey and season with lemon juice, pepper and salt. Serve the quesadillas with a little parsley and the yogurt sauce.
