This lasagna with mushrooms and spinach in a creamy sauce is a delicious vegetarian oven dish

 Preheat the oven to 180 degrees. Fry the mushrooms together with a chopped onion and garlic with some butter or margarine in a pan. Then drain them if a lot of moisture has been released.

 Also fry the spinach in a pan until it has wilted and drain. Heat the 40 gr butter in a pan and when it has melted add the flour. Cook the roux for a few minutes. Then add the milk little by little and stir well with a whisk. Add ⅔ of the grated cheese and let it incorporate into the sauce. Season the sauce with some pepper, salt and Italian herbs.

 Stir the mushrooms into the sauce as well. Then layer the mushroom sauce, some sauteed spinach, some pine nuts in the oven dish and cover with a layer of lasagne sheets. Repeat and finish with a layer of sauce and sprinkle with the remaining cheese and some pine nuts. Bake the lasagna with mushrooms in the oven for 40 minutes.
