 Finely chop the onion, ginger and garlic. Fry it in a soup pot with a little oil. Add the soy sauce, sugar, vinegar and a little bit of sambal. Stir in the tomato paste. Roughly chop the tomatoes and add to the pan, seeds and liquid. Cook for a few minutes and then add the water and stock cube. Let it simmer for 10 minutes.

 In the meantime, cook the chicken breast in a pan with water for about 15 minutes. Blend the soup well with the immersion blender. Add the noodles and cook them gently in the soup for a few minutes. Remove the chicken from the water and pluck it apart with 2 forks. Add the chicken to the soup. Chop the spring onion into rings. Serve the soup with the spring onions and bean sprouts.

 Tip: If you want the soup to be a little thicker, add tablespoon of cornflour after pureeing. I didn’t use a lot of sugar because I don’t like very sweet soup, but you can add more to make it sweeter.
