 Heat the oven to 200 degrees. Cut the zucchini in half lengthwise. Scrape some flesh from the center with a spoon. Place the courgettes in a baking dish or on a baking tray. Brush the tops of the courgettes with a little oil and sprinkle with a pinch of salt and pepper. Place the zucchini in the oven for 10 minutes.

 Chop the onion and garlic. Fry it in a pan. Add the minced meat and fry. Add the Mexican spices. Cut the bell pepper and spring onion into small pieces and stir-fry for a while. Also add the tomato sauce. Drain the corn and add to the meat mixture.

 Remove the courgettes from the oven and fill them with the Mexican mincemeat mixture. Sprinkle with grated cheese and return to the oven for another 15 minutes until the cheese is nicely melted. Garnish with some extra spring onions if desired.
