A healthy(er) and low-carbohydrate variant of the spaghetti carbonara based on zucchini and lean bacon



 Pass the courgettes through a spirelli cutter. Fry the lean bacon cubes in a pan until lightly crispy and then remove. Add the zucchini to the pan and cook for a few minutes. Remove any moisture that has been released.

 Mix the yogurt with the egg, garlic, pepper and salt. Add this mixture to the courgetti and mix through and warm through. Then add the fried bacon and add the parmesan cheese and stir again.

 Serve the healthy spaghetti carbonara with some fresh basil.

 Tip: instead of bacon you can also use smoked chicken.
