Heat the oven to 200 degrees. Prepare the mash according to the recipe or package, stir a pinch of curry through the mash.
Remove any dirty or broken leaves from the leeks. Cut the top dark green part of the leek, you can make a tasty soup with this, for example. Cut the stems into 2 pieces and wash them under cold running water.
Bring a pan with a small layer of water to the boil and stew the light leeks for about 8 minutes. Then drain them well and carefully.
Melt the butter in a saucepan. Add the flour and stir together and let the roux cook for 2 minutes. Gradually add the milk and keep stirring with a whisk until you have a smooth sauce. Season the sauce with salt and pepper. Melt about half of the grated cheese in the sauce.
Grease an oven dish and spread the mashed potatoes in it. Wrap the leek rolls in a slice of ham. Put them on the mash. Spoon some of the cheese sauce on top with a sauce spoon and divide the rest of the cheese over it. Place the oven dish with leek rolls in the oven for another 20 minutes.
Garnish the casserole with some parsley, if desired.
tip: prefer vegan? Replace the ham with vegetarian slices of ham or omit these and add a handful of salted cachew nuts.
