This noodle recipe is a delicious combination of coconut, lime and red pepper served with a piece of baked salmon



Finely chop the onion, peeled ginger, red pepper and garlic. Fry it in a pan with a little bit of oil. Add the bell pepper in cubes. Clean the snow peas, remove the ends and the hard threads with a knife. Add them to the pan and fry briefly.
Add the coconut milk and the fish sauce. Squeeze in the half lemon. Meanwhile, soak the noodles in a separate bowl. Drain and toss the noodles through the coconut mixture.
Meanwhile, fry the salmon in the pan over high heat for 3 minutes on each side. He may be pink inside. Sprinkle the salmon with the rest of the lime and season with salt and pepper.
Serve the noodles with vegetables on a plate or bowl and place the salmon on top. Sprinkle with some unsalted cashew nuts and possibly some extra red pepper and coriander.
