Easy and quick variant of the lasagna without an oven but from the pan with pieces of lasagna sheets in a delicious sauce

Chop the onion and garlic. Heat the oil in a pan. Fry the onion and garlic in this. Cut the carrot and zucchini into small cubes and fry for a few minutes. Season with the Italian herbs.
Add the diced tomatoes and tomato frito and stir well. Add a pinch of salt and pepper and tear in some fresh basil leaves and let it simmer gently. Cut the fresh lasagna sheets into strips. If you use hard sheets, break them into coarse pieces.
Add the pieces of lasagna sheets to the tomato mixture. Boil the lasagna sheets for about 15 minutes, this depends a bit on the type of sheets you use. Add a little water if the mixture becomes thick.
Divide the ricotta over the lasagna and garnish with fresh basil.
Tip: you can also add some (vegetarian) minced meat to the onion and garlic. Replace the ricotta with a handful of Parmesan cheese.
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
