Cut the zucchini into pieces. Fry them briefly in a pan with a pinch of salt, pepper and a little oil. Remove from the pan.
Cook the gnocchi al dente, this only needs 1 or 2 minutes. Drain and fry the gnocchi briefly in the frying pan to give it some color.
Place the fried gnocchi in a bowl and add the pesto and stir. Then add the pieces of zucchini and then the halved cherry tomatoes and arugula. Gently mix everything together and garnish with some Parmesan cheese.
Tip: also delicious with pine nuts.
You can use ready-made gnocchi or make your own gnocchi, using half of this basic gnocchi recipe . The same goes for the pesto.
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
