Gnocchi in tomato sauce

Must Try

This soft pasta in a homemade tomato sauce is also called gnocchi alla napoletana and is also kid-proof

Finely chop the onion and garlic. Fry in a pan with a little oil.
Add the peeled tomatoes and let it simmer for 20 minutes, occasionally crushing the tomatoes with a spatula. Tear some basil into pieces and stir into the sauce. Season with salt and pepper.
Meanwhile, cook the gnocchi for about 2 to 3 minutes. Drain well and then add to the tomato sauce.
Serve the gnocchi napoletana with some grated Parmesan cheese and pine nuts.
Tip: delicious with a salad
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
