With this winter bowl you get a large number of winter vegetables. Delicious with a scoop of homemade hummus and roasted seeds.



Preheat the oven to 180° degrees.
Do you use fresh beets? Peel them first and cut into small cubes. Cook them for 5 to 10 minutes until they are al dente. Leave the lid on the pan to keep them warm when they are cooked.
Wash the sweet potatoes well, peel if necessary and cut into cubes. Place them on a baking tray lined with baking paper or in an oven dish. Divide some oil, grate al hanout herbs and salt and pepper and put them in the oven for 15-20 minutes. Shuffle once halfway through. Turn off the oven when they’re done and leave them in the oven so they stay warm until you’re ready to serve them.
Meanwhile, cut the florets from the broccoli and then cut the stem into small pieces.
Take a pan and fill it with boiling water. First add the broccoli stems and after 3 minutes also the florets. Boil together for another 3 minutes, drain and let stand with the lid on to keep them warm.
Finely chop the onions and fry them with the turmeric and black pepper over a low heat. After a few minutes, add the white wine vinegar.
Fry the kale in a little olive oil until it has wilted slightly.
Did you opt for the pre-cooked beets? Then cut it into pieces.
Drain the lentils. These can be eaten cold, but if you like it better, you can warm them briefly in their own moisture. Do not let it boil.
Optionally, roast the pumpkin seeds until they start to pop slightly.
Now take 4 deep plates and divide the ingredients over the bowls. Spoon the hummus in the center and divide the onion and pumpkin seeds all over the dish.
Delicious to eat this dish warm in the evening, but also very tasty cold as a healthy and nutritious lunch.
Tip: Make the hummus yourself or choose one with a low saturated fat content so that you go for the healthiest option.
Are any of the bowl ingredients ready earlier than others? Set the oven to the lowest temperature and keep them there until you need them. Some ovens also have a keep warm setting. That’s totally handy.
Vary by adding a can of (vegan) tuna, pieces of fried chicken or vegetarian wok strips.
