Vegetarian tortellini casserole

Must Try

A delicious Italian casserole full of vegetables, a little spicy and with creamy melted mozzarella. And all that from €2.64 per person. Is not it nice?

Preheat the oven to 200 degrees.
Chop the onion, finely chop the garlic, peel the carrot and cut into cubes.
Heat oil in the pan and fry the onion and garlic.
After about 2 minutes, add the carrot cubes.
Fry this for about 5 minutes and then add the diced tomatoes with 100 ml of water.
Season with salt, pepper and a pinch of chili powder.
Leave on the stove for about 10 minutes. Then add the peas and cooled tortellini. Mix this well.
Cut the mozzarella into pieces and tear the basil finely. Add half of the basil to the pasta.
Divide the pasta with sauce in an oven dish and divide the rest of the mozzarella over it.
Bake in the oven for about 10 minutes or until the mozzarella has melted.
Budget tips: Buy products in larger packages. This often saves money in the long run.
Opt for (winter) carrots. These are often cheaper and you have to cut them small for this recipe.
