Prepare the dough. Preheat the oven to 220°C.
Finely chop the onion, red pepper and garlic.
Chop the bell pepper into small cubes.
Heat the oil in a frying pan and lightly fry the onion, red pepper and garlic. Turn off the heat and add the bell pepper and then the minced meat (it doesn’t have to be cooked through yet because it’s still going in the oven).
Stir in the tomato paste, cumin, paprika and a pinch of salt and pepper. Add a few tablespoons of water if needed to make the mixture a little smoother.
Divide the dough into 4 equal pieces and shape into balls. Roll it out into a long oval shape and place it on a baking tray with baking paper (I did 2 per baking tray).
Spoon some of the minced meat mixture onto the dough and spread over it, leaving the edges free. Fold the edges slightly over the filling.
Beat the egg in a bowl and brush the edges of the Turkish pides. Then sprinkle with sesame. Bake the Turkish pides in the oven for about 20 minutes.
