Do you use fresh red cabbage? Then finely chop and fry in a pan for 2 minutes. Add a dash of water and 1 tablespoon of vinegar and 2 tablespoons of sugar and simmer for about 20 minutes until the cabbage is soft. You can also add the apples in pieces halfway through.
Peel the potatoes and boil them for about 20 minutes. Also peel the apples and cut them into cubes.
Bring the milk together with the cloves in a saucepan just off the boil.
Drain the potatoes and mash well. Add the diced apples, you can leave them whole or mash through them as well. Remove the cloves from the milk and pour the milk over the potatoes. Stir in together with the knob of butter so that the stew becomes nice and smooth.
Season the stew with salt, pepper, cinnamon and thyme. Heat the red cabbage and fold it through the mashed potatoes. Roughly chop the walnuts and add last.
Tip: red cabbage stew is delicious with a (vegan) meatball or, for example, fish fingers.
