Peel the potatoes and boil them in a large pot of water for 15 minutes. Drain and mash them fine. Preheat the oven to 180 degrees. Chop the onion and fold through the mash. Also add the egg, some fresh chives, 3 tablespoons of grated cheese, milk and butter and mix to a smooth puree.
Season the puree to taste with a pinch of salt and pepper. Place a cooking ring on the baking tray with baking paper and sprinkle a thin layer of breadcrumbs on the bottom. Spoon in some of the puree and press down well. Carefully lift the cooking ring while holding back the puree with a spoon.
Sprinkle the mashed potatoes with the remaining cheese and bake in the oven for 10 minutes. To get a nice brown crust, turn on the grill for the last 3 minutes if possible.
