Filled abergines with minced meat

Baked aubergines from the oven with a delicious seasoned minced meat mixture.

 Heat the oven to 200 degrees. Brush the aubergines with some olive oil and place them on a baking tray or in an oven dish and bake for 30 minutes. Turn them over once halfway through. Meanwhile, chop the onion and garlic and sauté them in a pan. Add the minced meat and fry it. Season with salt, pepper, oregano and cinnamon. Add the diced tomatoes and let the mixture simmer for 10 minutes and thicken slightly.

 Cut the olives into rings and finally fold through the minced meat mixture. Remove the aubergines from the oven. Just don’t cut it all the way in half and fold it open. Spoon the meat mixture in between. Sprinkle with cheese and return to the oven for another 15 minutes. Sprinkle with some chopped parsley before serving.
