Preparation
Preheat the oven to 200 degrees.
Cut the ends of the zucchini and grate finely with a mandolin or grater. Place the grated zucchini on kitchen paper to allow it to drain a bit. Then roll the zucchini grater in a clean tea towel and squeeze so that as much moisture as possible can leak out.
Beat the egg in a bowl and crumble the feta over it. Stir everything together with the grated zucchini, some breadcrumbs, a pinch of Italian herbs, some pepper and a little salt.
Roll the mixture into balls with your hands. If the mixture is not firm enough, add some breadcrumbs. Place the balls on a lined baking tray. Bake the balls in the oven for 30 minutes until golden brown.
Serve with garlic sauce.
