Make your own fresh tomato sauce based on tomatoes, garlic and basil. Delicious as pasta sauce with various pastas, but also on pizza or other dishes!

 Cut a cross in the tomatoes and dip them in just under boiling water for 30 seconds. Then rinse them under the cold tap. Remove the skin with a knife and cut the flesh into pieces. Finely chop the onion and garlic. Heat a dash of olive oil in the pan and fry the onion and garlic for 3 minutes. Add the tomato paste.
 Also add the tomato pieces and the dried oregano and a dash of stock. Let the mixture simmer for about 25 minutes. Add more stock halfway through if the sauce thickens too much. Tear the basil into pieces and stir into the sauce. Delicious with pasta or with meatballs.
 Variation: fry a red pepper with the onion and garlic for a spicy taste or some strips of bacon for a savory taste.
