Vegetarian oven dish from Mallorca with layers of grilled vegetables and potatoes in tomato sauce

 Finely chop the onion and garlic and sauté in a deep pan. Season the onions with pepper, salt, thyme and oregano. Deglaze with a splash of white wine. When the alcohol has evaporated, add the diced tomatoes and passata. Add the bay leaf to this sauce and let it simmer on low heat for about 25 minutes.

 Season the potato slices with a pinch of salt and pepper and fry them in a frying pan for about 10 minutes. Meanwhile heat the oven to 200 degrees. Cut the bell pepper into pieces and the aubergine into slices and brush with a little oil.

 Then grill them in a grill pan. Place the potato slices in a large baking dish followed by the grilled bell pepper and aubergine. Pour over the tomato sauce and place in the oven for about 25 minutes.
 Tip: for a vegan version, use a vegan wine.
