Wonderful side dish of thin slices of sweet potato with cream, herbs and cheese from the oven. Delicious with meat, fish or vegetarian.



Preheat the oven to 200 degrees.
Peel the sweet potatoes and cut into thin slices of about 2 to 3 mm thick. This is most convenient with a mandolin, but a cheese slicer is also possible.
Grease an oven dish. Arrange the sweet potato slices nicely in rows in the dish. Can also be flat.
Crush the garlic clove and add to the whipped cream. Also beat in the thyme and salt and pepper. Grate the cheese finely and mix with the cream as well. Pour the mixture over the sweet potato.
Bake the sweet potato gratin covered with aluminum foil for 20 minutes and then another 25 minutes without foil. Check before serving if it is well cooked. Garnish with some fresh parsley.
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
