Nice fresh salad with a Tex Mex twist of nachos and a delicious dressing with lime and Mexican herbs




Halve the cherry tomatoes. Cut the cucumber in half lengthwise, scrape out some of the watery part with a spoon. Then cut into slices. Cut the avocado in half, remove the skin and pit and cut the flesh into pieces. Drain the corn.
Squeeze the lime, mix with the rest of the dressing ingredients. Mix the cucumber through the lettuce. Add the tomatoes and corn. Lightly mix in the dressing.
Finally add the avocado and tortilla chips. Serve immediately.
Tip: if you want to eat this salad as a main course, add some roasted sweet potato cubes or some chicken
