Creamy sweet potato BBQ salad

Turn the standard BBQ potato salad into a healthier version of sweet potato with a light but creamy yogurt dressing.



Peel the sweet potatoes and cut into dice of about 4 x 4 cm. Bring a pan of water to the boil and cook the sweet potato cubes for about 8 to 10 minutes until they are al dente. Then drain and rinse with cold water. Let them cool further.
