Super easy and delicious vegetarian variant on the carpaccio made of tomatoes

Ingredients

Preparation

Cut the tomatoes into thin slices with a sharp knife.
Divide between 2 plates and sprinkle with a pinch of salt and pepper.
Place a little rocket in the center and sprinkle with the croutons and grated Parmesan cheese. Drizzle with some olive oil.
Tips: Also delicious with (buffalo) mozzarella or burrata.
Parmesan cheese contains animal rennet, so this recipe is not 100% vegetarian. Replace the cheese with an old or matured cheese with vegetarian rennet or try a vegan cheese.
