760 gr tomatoes (2 cups Tasty Tom’s)
1 red onion
1 teaspoon thyme
splash of oil
2 cloves of garlic
2 stalks celery
1 cube of vegetable stock
500ml water
Pepper and salt
Parsley to garnish


Heat the oven to 220 degrees. Cut the tomatoes into quarters and place in a baking dish. Cut the garlic, onion and celery into pieces and add to the tomatoes. Add a dash of oil, thyme, salt and pepper and toss everything well.

Place in the oven for about 25 minutes. Place the tomatoes in a stockpot, add the water and stock cube and bring to the boil. When the stock cube has dissolved, puree the soup with a stick blender. Garnish with some fresh parsley.

Serving tip: delicious with breadsticks with Parma ham wrapped around it.
