Step by step crispy dough triangles filled with spinach and walnut

Ingredients

120 gr flour
3 tbsp olive oil
pinch of salt
60ml water
filling:
1 shallot
150 spinach
1 tbsp lemon juice
Salt and pepper
3 tbsp walnuts, roughly chopped
1 tbsp olive oil
1 tsp sumac (can be replaced with a little lemon zest)

Preparation

Preheat the oven to 200 degrees. Mix the flour and salt and add the oil. Start kneading and then add the water little by little until a smooth dough forms. Form about 12 balls and put them covered in the fridge.

In a large pan, fry the shallot in a tablespoon of olive oil. Gradually add the spinach until everything has wilted. Place the spinach mixture in a sieve and squeeze out all the moisture. Mix the spinach in a bowl with pepper, salt, lemon juice, sumac and walnuts. Remove the balls from the refrigerator and flatten or roll them. Spoon about 2 teaspoons of the spinach mixture into the center and fold into a triangle.

Repeat with all the balls and then place them on a lined baking tray in the oven for 20 minutes until golden brown. Let cool for a few minutes and serve warm.
