I had already made a sweet bread pudding with cinnamon and apple. But this ham and spinach recipe proves that you can also make tasty savory bread dishes. This dish is therefore ideal for using up old bread or other leftovers from the fridge. For example, replace the ham with leftover fried chicken or minced meat. Or add a bell pepper instead of the tomatoes. You can also flavor the egg mixture with a tablespoon of pesto instead of a teaspoon of mustard.

Ingredients :

100 gr dried tomatoes € 0.66
4 eggs € 0.80
150 ml milk € 0.15
handful of grated cheese € 0.40

At home:
1 teaspoon mustard
pinch of salt and pepper
Butter or oil for greasing

Preparation

Preheat the oven to 180 degrees. Finely chop the onion and garlic. Fry it in a pan with a little olive oil. Add the ham strips and fry for 3 minutes. Then add the spinach (can be frozen or thawed). When the spinach is completely thawed and wilted, stir in the dried tomatoes.

Drain the spinach mixture in a colander or sieve and squeeze out most of the moisture. Cut the bread into quarters (or smaller). Beat the eggs with the milk and mustard and season with a pinch of salt and pepper. Grease a baking dish with butter or oil.

Divide some bread with some of the spinach mixture in between in the dish. Repeat until everything is gone. Pour over the egg mixture and sprinkle with some grated cheese. Bake the dish for about 40 minutes at 180 degrees.
