Stir the cream cheese in a bowl. Grate the lemon and squeeze it. Add the juice and zest to the cream cheese.
Finely chop the chives and walnuts and stir in the cream cheese as well and season with a pinch of salt and pepper.
Cut the cucumber into long ribbons with a mandolin or cheese slicer.
Cut the salmon as wide as the cucumber ribbons.
Take a strip of cucumber and divide slices of salmon over it. Turn over so that the salmon is on the bottom and brush the top of the cucumber strip with some of the cream cheese mixture.
Then gently roll up and press the ends well. Stick a few sprigs of chives in the center if you like.
Tip: keep the salmon rolls in the fridge for a maximum of 1 day. Also replace the walnuts with toasted pine nuts.
