200 g wholemeal flour
100 g white caster sugar
1 tsp cinnamon
250 ml low-fat yogurt
200 g muesli with nuts (eg from Zonnatura)
80 g butter, melted
1 sachet vanilla sugar
½ sachet baking powder
2 eggs
1 large granny smith apple
3 tbsp honey
Muffin baking tray
Paper molds


Heat the oven to 200 degrees. Mix the flour, caster sugar, baking powder, vanilla sugar, cinnamon and half of the muesli together. Make a well in the center and pour in the yogurt, melted butter and eggs. Now fold everything together with a wooden spoon. Peel the apple, cut into small pieces and mix into the batter.

Divide the batter between the muffin tins, scooping them up to about 2/3 full. Mix the rest of the muesli with the honey and spoon it on the unbaked muffins. Gently push the muesli into the batter with a spoon or with your fingers. Place the muffins in the oven for 20 minutes. Check with a skewer if they are cooked inside.
