Fill a bowl with boiling hot water. Cut a cross at the bottom of the tomatoes with a knife. Place the tomatoes in the water for a minute and rinse them in cold water. The skin should now be easy to remove. Also cut out the watery part with the seeds and cut the flesh into small cubes.
Place the tomato pieces in a bowl and add a little olive oil.
Finely chop the basil and toss through the tomatoes. Season the tomato mixture with a pinch of salt and pepper.
Slice the bread and brush on both sides with a little olive oil. Grill the bread on both sides in a grill pan (or oven) until crispy.
Rub a clove of garlic over the top of the crusty rolls.
Place them on a plate and spoon the bruschetta topping over them. Garnish with an extra basil leaf, if desired.
Tips: You can use the bruschetta mixture immediately or let it marinate covered in the fridge (overnight is also possible) for a more intense taste.
