Mix the milk and water, add the yeast and 1 teaspoon of sugar. Put the flour in a bowl and add a pinch of salt and the baking powder. Then add the milk mixture and toss together. Mix it with a mixer with dough hooks for about 8 minutes to a smooth dough. Put the dough in a bowl and cover with a cloth or foil and let rise in a warm place for about 30 – 45 minutes.
After that, the dough has approximately doubled. Knead the dough again briefly and divide into 8 portions. Take a portion in your hands and twist it into a long thin string. Put it in a U-shape and twist the ends inwards into a knot and press well (this is handy to see in the video). Place the pretzels on a baking tray lined with baking paper. Brush them with a beaten egg. Mix the sugar and cinnamon and sprinkle over the pretzels. Cover the baking tray again with the cloth and let rise for another 10 minutes. Meanwhile heat the oven to 220 degrees. Bake the pretzels for about 15 minutes.
Replace the cinnamon sugar with sea salt or poppy seeds for a savory version.
