2 courgettes
1 onion, chopped
200 g quinoa
12 slices of bacon
fresh basil
250 gr cherry tomatoes
1 stock cube
Handful of walnuts
Pepper and salt


Heat the oven to 200 degrees. Cook the quinoa in a pan of water with the stock cube according to the package. Fry the onion in a pan until translucent and light brown. Cut the courgettes in half and scrape out some of the flesh with a spoon (we don’t use this). Place the zucchini in a baking dish. Sprinkle the inside with a little salt and pepper.

Cut the tomatoes into quarters and coarsely chop the walnuts and toss with the fried onion through the quinoa. Fill the courgettes with the quinoa mixture. Carefully wrap the bacon slices around the stuffed courgettes and place them in the oven for about 25 to 30 minutes until the courgettes have softened and the bacon is crispy.
